These Rose and Oat Energy Bites contain a subtle rose note. They’re perfect for a quick snack or sweet treat on the go. Here’s how to make them:

Ingredients:

  • 10 dried dates, pitted
  • 1 cup rolled oats
  • 1/2 cup rose tea
  • 1/2 cup almond butter
  • Pinch of salt
  • 1/4 cup of coconut shreds
  • 2 tablespoons of honey

Instructions:

1. Prepare Ingredients:

Make rose tea and set aside until cool. (1-2 tablespoons rose tea + hot water + about 20 minutes)

If your dates are not soft, you can soak them in warm water for about 10 minutes to soften them before using. Drain the dates before blending.

2. Blend the Base Mixture:   

In a food processor, combine the dates, rolled oats, rose water, and almond butter with a pinch of salt.

Then add the coconut shreds.

3. Blend Until a Dough Forms:

Pulse the ingredients in the food processor until they start to come together and form a sticky dough. The mixture should hold its shape when pressed between your fingers.

    4. Check the Consistency:

    Stop blending periodically to check the consistency. If the mixture is too dry, add a bit more almond butter or a splash of water. If it’s too wet, add more oats.

    5. Taste and Adjust:

    At this point, you can taste the mixture and adjust the sweetness or the rose tea flavor by adding more if desired.

    6. Roll into Bites:

    Once the mixture has reached the desired consistency and flavor, use your hands to roll small portions of the mixture into bite-sized balls. Press and roll firmly to ensure the bites hold together.

    7. Let sit for 10 minutes

    8. Optional Coconut Coating:

    If you like, you can roll the energy bites in shredded coconut to add texture and a touch of extra flavor. Simply spread shredded coconut on a plate and roll the energy bites in it until coated.

    9. Chill and Set:

    Place the energy bites on a parchment-lined tray or plate and refrigerate them for about 30 minutes. This helps them firm up and hold their shape.

    10. Serve and Enjoy:

    Once chilled, your Rose and Oat Energy Bites are ready to be enjoyed. Keep them stored in an airtight container in the refrigerator for freshness.

    This is a really basic energy bite recipe. It can be customized changing with nut butter you use, swapping it for a seed butter, etc.
