Recently my cousin gave me a bag of Roma tomatoes from his garden. So, I decided to play around and try out this Homemade Oregano And Basil Pasta Sauce Recipe.

Ingredients:

  • 6-8 Roma tomatoes
  • 2-3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon red pepper flakes for some heat
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving

Instructions:

  1. Prepare the tomatoes: Start by blanching the Roma tomatoes to remove the skins. To do this, bring a large pot of water to a boil. Score an “X” on the bottom of each tomato and then carefully place them in the boiling water for about 30 seconds. Remove them with a slotted spoon and immediately transfer them to a bowl of ice water to cool. The skins should easily peel off after this. Once peeled, cut the tomatoes in half and remove the seeds. You can squeeze them gently to get rid of excess juice if you prefer a thicker sauce.
  2. Sauté onions and garlic: Heat olive oil in a large saucepan over medium heat. Add the chopped onion and garlic and sauté until they become soft and translucent, about 5 minutes. If you like a bit of heat, add red pepper flakes at this stage.
  3. Blend the tomatoes: Place the peeled and seeded tomatoes into your food processor and pulse until you achieve your desired consistency. Some people like their sauce chunky, while others prefer it smoother.
  4. Cook the sauce: Add the blended tomatoes to the saucepan with the sautéed onions and garlic. Stir in dried oregano and basil. Season with salt and pepper to taste. Simmer the sauce over low to medium heat for about 20-30 minutes, or until it thickens to your liking. If the sauce is too thick, you can add a bit of water or tomato juice to reach your desired consistency.
  5. Finish and serve: Once the sauce is ready, taste it and adjust the seasoning if necessary. Tear some fresh basil leaves and stir them into the sauce for a burst of fresh flavor. Serve the sauce over your favorite pasta, sprinkle with grated Parmesan cheese, and garnish with additional fresh basil leaves.
